The wine harvest is a tradition at Domaine de Tara. Hand-picking avoids damaging the grapes, keeping the full aromatic potential. For white grapes in particular, harvesting them in boxes fully protects bunches until they reach the pneumatic press. As a result the juices do not oxidise, and retain all their freshness. Although hand-picking is hard work, and far more expensive than mechanical harvesting, the Domaine de Tara is comitted to this traditional process.

The grapes are collected in small 15 kg buckets to prevent any crushing and preserve all their aromatic qualities. The crop is picked by hand, parcel by parcel, and variety by variety. Harvesting usually takes a month from mid-September to mid-October depending on the year, the grape variety and the location of the vines.
